Santoku chef knife with a Damasteel DS93X stainless steel blade. This Swedish steel consists of two different hardenable knife steel grades. It combines corrosion resistance with superior strength. An unique cutting ability is achieved through superior edge properties. Easy to maintain. The handle materials are very resistant to humidity and easy to clean, these materials are perfect for work in a professional kitchen. Comes with a vegetable tanned handmade leather sheath for the travelling chef.
A Santoku is used as a general-purpose kitchen knife originating in Japan. “Santoku” in Japanese means knife “Three Virtues” as this knife is a true all rounder: vegetables, meat, fish, etc… The blade was cryo treated in liquid nitrogen to fully optimise the crystal structure to 62 HRC. This is much harder than regular knives so this knife should be treated as a high precision tool and not as a bone chopper. The blade is 180mm long (demi-chef length) and is made of stainless powder metallurgic damascus steel. The pattern can also be seen on the sides of the knife. This is not often done as the handle needs to be fitted perfectly before assembly and etching. The etching in an acid bath reveals the damascus pattern and is done at the very end of the making proces. It’s much easier to over size the handle and grind it flush with the knife, but no pattern will show. The handle is a combination of black/white Juma.
